Sausage and Artichoke Heart Pizza

  • 2 tablespoons olive oil
  • 1 package (2 crusts) pizza crusts – Gluten Free for me!
  • 1 (28-ounce) can Italian diced tomatoes with basil
  • 1 large red onion, thinly sliced
  • 1 (14-ounce) can artichoke hearts, drained
  • 1/2 pound sausage of your choice, squeezed from casing, cooked and drained (optional)
  • 6 ounces fresh mozzarella, sliced
  • 1 teaspoon Italian seasoning
  • red pepper flakes (optional)

Preheat oven to 400°F. Place pizza crusts on work surface. Brush all over with olive oil. Top crusts with diced tomatoes, onion, artichoke hearts and sausage. Arrange mozzarella slices on top. Bake 10-15 minutes, until crispy and cheese is bubbly. Sprinkle with Italian seasoning and red pepper flakes, if desired.

It is our anniversary week (Friday will be 7 years)! When the husband and I met I could/would enjoy all foods. I have since been diagnosed with Celiac Disease and chosen to be a vegetarian. The husband has taken all of the changes in stride, more than that actually. He supports me. It is quite amazing the amount of support this man gives me, unconditional love is an amazing thing. In honor of our seven years together I told him to pick out whatever kind of sausage he wanted (from Whole Foods where the animals are not pumped full of antibiotics and live a life where they see the sunlight) for pizza. These pizzas were absolutely delicious!! And I would also like to say that I absolutely HEART artichoke hearts.

On a completely different note, if you are living in North Carolina or Indiana please go out and vote today! I do not hide who I am supporting, but this soap box moment is not about that, it is however about exercising your right to vote. I was looking at the ballot this morning and got chills. This really is history in the making. Make your voice be heard.
