bread and butter pickles and another giveaway

i have officially canned this year. oh my. this is a big deal. we didn’t think we would be able to can anything from our garden this year but yesterday was the big day. we had a rush on cucumbers and decided to make bread and butter pickles. i have never canned cucs before. apparently i am not the best packer inner because there is quite the amount of liquid/space at the bottoms. oh well. extra pickle juice. who would complain?

i used the recipe from freshpreserving.com aka my canning bible. it used the ball simple creations bread & butter pickle mix that i found a wal-mart on clearance the other day. this recipe makes 4 (32 oz) quarts or 8 (16 oz) pints.


you will need:
7 lb pickling cucumbers (about 28 small to medium)
5 cups vinegar
5 cups sugar
1 3.5-oz pkg ball simple creations bread & butter pickle mix
4 (32 oz) quart or 8 (16 oz) pint glass preserving jars with lids and bands

directions:
1.) prepare boiling water canner. heat jars and lids in simmering water until ready for use. do not boil. set bands aside.

2.) cut cucumbers into 1/2-inch thick slices, discarding ends.


3.) combine vinegar, sugar and contents of package in a medium saucepan. heat to a boil.


4.) pack slices into hot jars leaving 1/2 inch headspace. ladle hot pickling liquid over cucumbers leaving 1/2 inch headspace. remove air bubbles. wipe rim. center hot lid on jar. apply band and adjust until fit is fingertip tight.

5.) process filled jars in a boiling water canner for 15 minutes, adjusting for altitude. remove jars and cool. check lids for seal after 24 hours. lid should not flex up and down when center is pressed. (side note: don’t get discouraged if lid continue to flex up after removed from canner. mine took over night but are all sealed up now.)

in about 4-6 weeks these bad boys should be super yummy!

I could almost smell all the great aromas. I can almost taste them with a slice of german chocolate cake. I wonder if there is a good gluten-free german chocolate cake receipe somewhere?

These look awesome! I wonder what ingredients are in the mix from Wal-Mart? Any dairy? It has been a long time since I had a bread and butter pickle! :)
