soup was my inspiration

really. soup. i love soup. when i found out i would be hosting the husband’s family for a birthday party the wheels started turning. what to make, oh what to make. i wanted it to be casual and easy. comforting but not heavy. ahhh soup became my inspiration.

i decided to have 2 options. 6 people probably wouldn’t have the same taste in soup so 2 options sounded like a good, easy plan. turkey chili. a good stand by. throw it all in the crock pot and let the flavors all come together. next i wanted to make something a little different. tomato zucchini is what i came up with. i have had it from whole foods and loved it so i thought i would give it a try. i thought it was great.

here is the recipe …

2 tablespoons olive oil
6 garlic cloves, chopped
1 onion, chopped
2 (28 ounce) can crushed tomatoes
2 teaspoons basil
2 teaspoons thyme
4 medium zucchini, cubed and then put through food processor
2 tablespoons white sugar
1 tablespoon brown sugar
4 cups V-8 juice
1 cup heavy cream (optional)
1/2 cup parmesan cheese (optional),
salt & pepper to taste

directions:

heat oil in a large saucepan or pot on medium-low heat.
add onion and garlic and cook until softened and fragrant
add the basil and thyme, mix
add the tomatoes, zucchini, white and brown sugar, mix
add the V-8
cover allowing some steam to escape and simmer on low heat for 30-40 minute.
add the parmesan, stir
(optional) add the cream, stir

i served in gluten-free bread bowls. i thought it would be a fun way to serve soup. bowls can be so boring. it was fun to be able to eat the bowl!

moving on to the cake. having the whole foods gluten free bakery right around the corner comes in handy. especially when you have a friend that works in the bakery. i called a few days ahead, giving her complete control over the details of the cake. i just requested it be both gluten-free and chocolate. and this is what she made for me. seriously. friends that work in a bakery that are willing to do this for you. can’t be many things in life better.


i am off to work on etsy orders. wow that sounds so professional. like a real business. everyday for the last 5 days i have received at least 1 order. that is amazing. i have to pinch myself throughout the day to make sure it is real. people are wanting to spend money on something i have created. it blows my mind.

and this is birthday month. we have had 3 very important birthdays the past 3 days in a row. so i can’t end this post without a huge HAPPY BIRTHDAY to my mom. i love you. i can’t express how much your supportive and encouraging words, your unwavering kind heart, your realistic conversation, your thoughtful acts, and abundance of love for me and my husband mean to me.
