we are having leftover homemade tomato soup in gluten-free bread bowls tonight. the artichokes will definitely make another appearance on our table because they were so so super yummy! in all honesty, my first attempt at cleaning out the artichoke went badly as i broke it in half. the second one, oh well it looked just like the picture. luckily, both tasted delicious!
i do have apples staring at me that desperately need to be cooked/eaten/composted whatever something needs to happen. then i realized it was tuesday and i hadn’t posted a recipe. and bam! inspiration.
so tonight i am surprising the husband with an apple tart. i just finished and it looks so yummy. i am trying to figure out a way to sample without him noticing!
here are the deets:
1 disc of store bought pie pastry dough (i made my own, but if it weren’t for this darn food allergy i would totally buy the pre-made)
2-3 apples – peeled, cored and chopped
5 TBS sugar
1 TBS Cornstarch
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 stick butter cut in small cubes
1 egg mixed with 2 tsp water or milk
3 TBS Sugar
unroll your pie dough onto a parchment lined baking sheet. in a separate bowl, combine apples, sugar, cornstarch and spices. fill the center of the pie shell, pile it up high in the middle. gently fold the outside of the shell into the center to hold the fruit inside. dot apples with the butter cubes. brush the outside of the tart with your egg wash and sprinkle the crust with the sugar. this will give it a crunchy crust and makes it look spectacular! bake in a preheated 400 degree oven for 35-40 minutes.
