weekly menu

i know this list is early but it desperately needed to be done for several reasons.

first, i forgot to make the list last week and i really noticed a difference. it would get to be 4 or 5 and i was scrambling with motivation and inspiration for dinners. i realized that i do this mostly for me because it keeps me organized and means i don’t have to keep track of printed recipes. i just take my laptop into the kitchen and have all i need for dinner.

second, it is super double coupon time at harris teeter. if you grocery game then you know this is the time to stock up. i have started saving up coupons for either super doubles or triples and trying to not go to the store during the off weeks, aside from milk and needed fresh produce.

anyway, here is the list. do you find it helpful? i love reading what other people are making. i hope that doesn’t sound weird?!?

saturday (run group, 8 mile run)
breakfast: yogurt, banana, protein water
lunch: out – chipotle, super yum!
dinner: whole grain, homemade pizza with mushrooms, peppers and bacon

sunday (gym, swim)
brunch: oatmeal, whole-grain pancakes with mashed bananas
dinner: beef and quinoa meatballs with brown rice spaghetti, freeze leftover meatballs

meatless monday (gym)
breakfast: slim fast shake with banana
lunch: greek yogurt, peanut butter sandwich
dinner: vegan brunswick stew

tuesday (gym)
breakfast: greek yogurt, banana
lunch: leftover brunswick stew
dinner: bbq huevos rancheros

wednesday (run group, 2 miles)
breakfast: oatmeal with raisins
lunch: leftover huevos rancheros, no egg
dinner: chicken enchiladas

thursday (beekeeping class!)
breakfast: slim-fast shake with banana
lunch: oatmeal, whole grain pancakes
dinner: leftover chicken enchiladas

friday (off day!)
breakfast: oatmeal with raisins
lunch: greek yogurt, peanut butter sandwich
dinner: birthday dinner with friends. making a roast with mashed potatoes, corn, carrots. homemade rosemary bread with goat cheese. super friends, super fun!

saturday (10 mile run!)
breakfast: yogurt, banana, protein water
lunch: out – chipotle, super yum!
dinner: birthday celebration for me and my cousins!! can’t wait to see everyone!

sunday (off day!)
brunch: oatmeal, whole-grain pancakes
dinner: leftover (frozen) beef and quinoa meatballs and brown rice spaghetti
