breakfast goodness

when i was first diagnosed with celiac i thought i wouldn’t be able to eat oatmeal again. i love oatmeal. oatmeal cookies. a bowl of oatmeal for breakfast in the morning. plain oatmeal with honey drizzled. oh my. it was goodness i thought i had to say goodbye to.

then i found these. they are just like i remembered.

i am trying to urge cooler weather to hurry up and get here to stay. so this is what i made. baked oatmeal.

2 cups milk, i use skim
1 cup water
1 t. vanilla extract
1 t. almond extract
1/3 cup dark brown sugar
1 ½ cups rolled oats
½ cup dried fruit of your choice, i used raisins
½ cup toasted pecans, roughly chopped or whatever nut you have on hand
1 t. cinnamon
1-2 pieces fresh fruit, peeled, pitted, and sliced, i used the sliced peaches with no syrup that i canned during the summer

preheat oven to 350 and spray a small rectangular baking dish with nonstick spray and set aside.

combine the liquids, milk, water, extracts, and sugar in a medium bowl.

in a large bowl, combine oats, dried fruit, nuts, and cinnamon. then combine the liquid and stir. pour the mixture into the prepared baking dish. top with the sliced fruit. bake for 30 mins or until all liquid is absorbed.

i served this in a bowl with a bit of additional milk and small drizzle of honey.
