flaxseed pancakes. yes please.

breakfast for dinner makes my soul happy. when making weekly menus i often forget that the most simple foods can be both nutritional and super yummy. such as pancakes.

i have been craving walnuts lately like crazy. i seriously can not get enough. so i went searching through the pantry to see what i could eat that would tie in my craving of walnuts.

to make 8 good size pancakes this is what i did: in one bowl mix all the goods together.

1 cup gluten-free all purpose flour such as pamela’s. or regular all purpose flour for those of you not avoiding gluten as if it was the plague.
1/4 cup ground flaxseed
1/4 cup chopped walnuts
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
1/4 cup pure maple syrup
1 large egg

i served them with strawberries and a small bit more of pure maple syrup. a side of honey vanilla greek yogurt. delicious.

and i did add chocolate chips to the last one pancake for the husband. i know. he loves me.
