major yum factor!

who knew vegetables could be so absolutely delicious?! not this girl. but apparently they are. last night i made a southwestern omelet with egg whites (plus one egg) that was filled with black bean goodness. roasted some red potatoes and decided to use one of the butternut squashes we got from our weekend excursion to the mountains.

the butternut squash was delicious. i am debating whether to eat the other one for lunch or to save it for when the husband comes home to share. hmmm. what would you do?


so you slice your squash in half, lengthwise. scoop out the pulp and seeds. per half, put 1 teaspoon of butter or earth balance, for the vegan version. sprinkle 1 teaspoon brown sugar per half.


in the oven at 400 degrees for about 25 mins. or until the flesh is fork-tender.


oh man it was good. seriously, who knew a squash could taste so good?
