sometimes you feel like a nut …

i am back on the oatmeal bandwagon. i fell off. got tired of it. but then i stopped losing weight. so i quickly decided to jump back on. it is amazing how full and for how long i feel full after eating a bowl of oats for breakfast.

and, well, i am now obsessed with almond butter. at some point i will venture into making my own butters but not today. a good friend of mine that i don’t see enough of, naomi, posted a link to almond joy oatmeal a few weeks back on facebook. i immediate wrote it down. i mean. i love almond joy candy bars. i always feel like a nut. in all aspects of my life.


i have to say i was pretty impressed. i was weary because there were a lot of “unsweetened” ingredients going in the crock pot. and well. i like sweetness. but this morning i added 2 tbsp of honey and a tbsp of almond butter and it was great. really, really good. something i will definitely make again. and not just because i have all of this coconut milk in the refrigerator!

here is the recipe from fatfreevegan.com. with my adaptation at the end.
1/2 cup steel-cut oats
2 cups unsweetened So Delicious Coconut Milk (only 50 calories a cup!)
1 tablespoon unsweetened cocoa
2 tablespoons finely shredded unsweetened coconut
1 teaspoon vanilla extract
1/4 teaspoon almond extract
sweetener to taste (she used agave nectar to make it vegan, we are beekeepers and honey lovers so i chose 2 tbsp of honey.)
toppings for serving: slivered almonds (about 1 tablespoon per serving)

the night before: spray your crock with some oil to help with clean up later. add everything except honey and almonds. cook on low over night (7 to 9 hours).

in the morning: stir your oatmeal well. it may seem watery at the top but if stirred it should become a more uniform consistency. stir in sweetener and top each serving with slivered almonds.

this recipe make 2 servings. 1 serving has 318 calories which is a great start to my morning!

we have started our garden! cabbage. various types of lettuce. many, many onions. strawberries.


and sugar snap peas. oh how i love some sugar snap peas. i love their little sprouts.

and in case you were curious, i am off to the orthodontist for my “hopefully” final appointment next week. 1 more tray and then i am “hopefully” done. invisalign has been tremendously painful. i am not going to lie. the orthodontist said every two weeks when you “snap” on a new tray it is equivalent to getting braces on for the first time. serious pain people. which is why i am so hopeful i only have 1 more tray. but i am starting to love my smile (something i have never done!) and am amazed at how different my bite is. yeah for healthy teeth!
