sunday
brunch: “waffle bar” with family. thanks to my new waffle maker, we had warm, fresh (gluten-free) belgium waffles. toppings included: strawberries, blueberries, chocolate chips, walnuts, fried apples, cinnamon, whipped cream, maple syrup and honey. i also served yogurt parfaits and apple steel cut oatmeal. i am thinking “waffle bar” is going to become a family tradition.
dinner: leftover pizza from pizza night last night. i made three homemade pizzas (we had family in town and our newly engaged brother-in-law and his fiancee over for games and pizza!) needless to say, there are lots of yummy leftovers.

monday
breakfast: leftover apple steel cut oatmeal.
lunch: energy smoothie. yogurt and granola with fruit.
dinner: swiss chard with chickpeas and quinoa.

tuesday
breakfast: leftover apple steel cut oats.
lunch: kale-apple green smoothie. yogurt and granola with fruit.
dinner: steak with spinach and quinoa. (1)

wednesday
breakfast: whole grain cereal.
lunch: strawberry-flax smoothie. (strawberries were on sale at the grocery store!) yogurt and granola with fruit.
dinner: broccoli and tofu stir fry. served with brown rice.

thursday
breakfast: yogurt and granola with fruit.
lunch: leftover stir fry.
dinner: basil and goat cheese stuffed pizza. oh yes. it is going to happen. white pesto pizza for the rest but really who cares? goat cheese stuffed pizza people!

friday
breakfast: oatmeal.
lunch: leftover stir fry.
dinner: crab cakes with gluten free substitutions. (2) baked spinach.

saturday
breakfast: yogurt and granola with fruit.
lunch: omelet with roasted potatoes.
dinner: out with friends. (3) so excited!

sunday
brunch: waffles. oh yes. sunday tradition.
dinner: cookout with family. (4) celebrating matt and beth’s “white coat ceremony.” it is a very big and exciting deal in the pharmacy school world!
