ice cream for dinner



what happens when the husband isn’t having such a great day at work and i spent an hour on the elliptical at the gym? ice cream for dinner.

perk for being just the two of us.

the husband didn’t get home until about 8 last night so it was already going to be a late dinner. so i whipped up some blueberry waffles. we love breakfast for dinner nights!


here is my recipe for blueberry waffles.

1 1/2 cups flour (i used my gluten free whole grain mix. because if you are going to put ice cream on your dinner you should at least have something “good” for you underneath.)

1/3 cup rolled oats

2 teaspoons baking powder

1/3 cup brown sugar

1/4 teaspoon salt

1 teaspoon cinnamon

2 eggs

1 teaspoon vanilla extract

1 1/3 cups milk

1/4 cup butter, melted

2 pints fresh blueberries

vanilla ice cream +

preheat your waffle iron and spray it with non-stick spray. (good idea to spray before each waffle because of the blueberries.)

in a bowl, combine flour, oats, baking powder, sugar, salt and cinnamon. stir in eggs, milk, vanilla and butter, mixing until combined and smooth. fold in blueberries. make waffles per your iron’s directions.

serve waffles with vanilla ice cream.

can you think of a better way to spend a monday evening?!
