back to our regularly scheduled to do list

after an awful day of gastrointestinal protests everything is back to a simple calm.  back to the plan.  eat smaller portions. check. grill out amazing dinners. check. workout. check.

this past weekend we bought smaller bowls.  i know it may sound silly but go with me.  we have beautiful huge, comfort loving bowls.  when you want a bowl of comfort, i got ya covered.  when you want an appropriate portion you can barely notice there is food in the bowl.  i know it is completely psychological but all last week anything i put in one of our HUGE bowls resulted in me feeling under satisfied and never full.  so we bought really small bowls.  filled with water our new bowls are a 3:1 ratio to our bigger bowls.

the result:  a bowl FULL of yummy and satisfying oatmeal.  and a burger on a “dessert” plate. now that is comfort, just on a smaller scale.

i know i say you must try whatever food i am posting about.  but please listen this time.  you must make these kabobs.  they are so amazing.  i am really close to making them again tonight.  for reals people.

here is the tweaked recipe for our tastes.  the blend of the spicy chicken to the sweet mango and red peppers.  oh my.  yep.  we will be making these again tonight.

jerk chicken mango kabobs (adapted from homemade by holman)

juice of 2 limes
1/2 – 1 tablespoon chili powder
1 tsp cayenne pepper
2 tsp chopped fresh cilantro
1/2 tsp allspice
1/2 tsp salt
2 cloves garlic, minced
1 tablespoon brown sugar
1/4 tsp cinnamon
1 lbs boneless, skinless chicken breasts
1 mangoes
1 red bell peppers

combine all ingredients through cinnamon in a bowl and mix well. cut chicken into approximately 1 1/2″ chunks. add chicken to the marinade and refrigerate for at least one hour.

preheat the grill to medium heat.

cut mango into large chunks. mangoes have a large flat pit in the center. cut each side off the mango, your knife will easily slice through the flesh of the fruit but not the pit so you’ll know where to cut. i peel my mango with a veggie peeler then slice with a knife.

cut the bell pepper into large chunks and skewer however you see fit by alternating with the mangoes and chicken pieces or skewers for chicken, veggies, and fruit. grill about six minutes, rotate skewers, continue grilling about six more minutes until cooked through.

and because things are back to the program that means my behind went to the gym today.  seriously this is depressing every time.  a good before shot.
