date night dinner and the week ahead

this past saturday night the husband and i had date night at home.  we haven’t been eating out, hardly at all, and wanted to make something at home but wanted to make it special.  cue candles.

the husband grilled a whole chicken and admitted it was a bit awkward when carrying said chicken out to the grill in front of our own chickens. it is the fact that he has those thoughts that make me absolutely adore him.  i was in charge of the vegs. i chose to grill an eggplant (my favorite) and stuffed artichokes. 

i made several substitutions to make the artichokes not as high calorie as they typically are.  i used egg whites instead of eggs, whole grain bread crumbs (thanks udi’s gluten free sandwich bread!), and only a 1/4 cup total of shredded parm cheese.  steamed then roasted (in veg broth) in the oven and super yum.

i absolutely l.o.v.e. cooking meals together.

so for the week ahead here is what i will be eating.

monday
breakfast: (we are both sick and i slept until 10:30 this morning) i ate a banana and decided to hold off until lunch.
lunch: no salt deli turkey, swiss cheese, alfalfa sprouts, whole grain sandwich. 2 rice cakes with 1 laughing cow cheese wedge.
dinner:  blueberry yogurt, fresh blueberries, 4 rice cakes with 2 laughing cow cheese wedges.

tuesday
breakfast:  steel cut oats with fresh blueberries.
lunch:  out and about with my fun cousin.
dinner:  on my own for dinner so probably (depending on lunch) something light like yogurt or a protein bar.

wednesday
breakfast:  steel cut oats with fresh strawberries.
lunch:  mango fruit smoothie.
dinner:  stuffed peppers (no meat, sub black beans instead)

thursday
breakfast: protein bar with banana.
lunch:  leftover stuffed peppers.
dinner:  out with friends. i am bringing veg kabobs to join in with tons more healthy grilling fun!

friday
breakfast:  steel cut oats with fresh blueberries.
lunch:  out with a dear friend that i am so looking forward to seeing.
dinner:  broiled flank steak with warm tomato topping. with brown rice and sauteed spinach.


saturday
breakfast: yogurt with fresh blueberries.
lunch: no salt deli turkey, swiss cheese, alfalfa sprouts, whole grain sandwich.
dinner:  out with the husband for the NEW KIDS ON THE BLOCK concert. no big deal.

sunday
brunch:  steel cut oats with fresh banana slices.
dinner:  tilapia tacos. yum.
