dreams of fall

yesterday the weather was a bit cooler on the way to the gym.  (yeah for going 3 days in a row!)  it immediately got me excited about fall.  and winter.  i love both seasons so very much.  summer.  nope.  and with the heat and humidity this year, i am completely over it.

i whipped up a black bean soup for dinner.  made a homemade whole grain baguette.  major yum.

i loosely followed this recipe. but here is what i did different.

i added lots of peppers and onions.  vegs are good.  they fill you up and don’t take up many calories.  whenever i can add extra vegs to any dish, i do.  i found these babies at trader joe’s yesterday.

i grabbed a couple of bags.  they are simply peppers and onions.  no sauce. no salt.  beautiful.

here were my ingredients:
olive oil
1 bag of bell peppers and onions
4 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon chili powder
2 15.5 oz. cans black beans, low sodium. drained and rinsed.
1 15 oz. can diced tomatoes. in juice.
1 cup vegetable broth
1 handful fresh cilantro, chopped.
1/4 cup feta cheese

in a large pan, heat olive oil over heat.  add frozen vegs and garlic.  sauté until tender.  stir in cumin and chili powder.  add black beans, diced tomatoes, veg broth, and cilantro.  bring to a boil and allow to cook for 2 or so minutes.  transfer 1 cup to a blender and process until smooth.  stir back into soup and keep warm until ready to serve.  serve topped with feta cheese.

i didn’t add salt but the original recipe called for 1 teaspoon.

this soup serves 4.  meaning yummy lunch leftovers for me today!
