for dinner last night.

for me an egg in a basket.  the husband had never heard of this and i feel like it is quite common.  please leave a comment so we can know who is right.  (if you watch modern family and know me and the husband, you know we saw a lot of ourselves in the “who is right” commentary!  seriously so happy it is back!  love it!)

gluten free udi’s whole grain bread.  one egg from our rhode island red.  spray skillet with non-stick spray instead of butter for those watching calories.  let one side get settled then flip.  done.

for the husband a 4 egg omelet, 3 from the rhode island red and 1 from the ameraucana.  (they all taste the same just look different because of the shell color.)  inside his omelet a heaping handful of spinach and a cheese blend.  plus two gluten-full biscuits.

i also had a yogurt with chia seeds.

quick, easy, healthy and delicious dinner.

I can't remember what my mom called them, but we had them growing up. I've made them a few times since then as well. David

We had these about 3 times a week growing up-- but my mom called them "eggs in a birds nest" haha

I recently learned about it from the Pioneer Woman cooks blog. Never common in my house, but will be a staple now, I think!
