until then here is what i will be eating.

wednesday
breakfast:  steel cut oats. crumbled granola bar on top.
lunch:  2 slices whole grain bread, peanut butter, banana, and cinnamon. i seriously missed this while on vacation.
dinner:  out and about with a trip to the grocery store. fun times people.

thursday
breakfast:  steel cut oats. sliced banana.
lunch:  vanilla cherry green smoothie.
dinner:  pesto salmon. served with caprese quinoa tomato salad.

friday
breakfast:  steel cut oats. sliced banana. 1 tablespoon brown sugar melted on top.  major friday treat yum!
lunch:  mango green smoothie. leftover quinoa tomato salad.
dinner:  chili lime tofu over collards and quinoa.

saturday
breakfast: egg white omelet with salsa, mushrooms, and spinach.
lunch:  leftover tofu with collard greens for me.  sandwich for the husband.
dinner:  crispy shrimp tacos.
dessert: strawberry fool.

sunday
brunch:  whole grain pancakes. (i substitute my gluten free flour!) topped with strawberries and bananas.
dinner: scrambled egg and soy chorizo stuffed peppers. served with brown rice and refried beans.
