rainy day.

it is a rainy, chilly day here.  perfect for cuddling with the pups and the cat.  mr. milo definitely knows how to relax.  we should all take note, pull the curtains and take a nap.  if only there wasn’t important, deadline dooming work to be done.  i woke up with a stuffy head and a bit of a scratchy throat.  this is positively no good.

sunday i made chili in the slow cooker.  i am so excited that it is slow cooker weather again!  i love making a meal on sunday with lots of leftovers for my lunches during the week.

i love chili because there are so many varieties.  all equally comforting and delicious to my tummy.  this was an organic, local ground beef chili with lots of veggies.

here is what you need and the corresponding calories:
1.15 pounds of lean ground beef – 1325 calories.
1 – 16 ounce can of kidney beans, rinsed and drained – 330 calories.
1 – 16 ounce can of black beans, rinsed and drained – 350 calories.
2 – 14.5 ounce cans of diced tomatoes, undrained – 175 calories each.
1 – 8 ounce can tomato sauce – 70 calories.
1 can of green chilis – 10 calories
1 – 16 ounce can of corn, rinsed and drained – 210
2 medium onions, chopped – 67 calories each.
1 green pepper, chopped – 30 calories.
2 cloves of garlic, minced.
2 tablespoons chili powder
2 teaspoons of salt
1 teaspoon of pepper

* all our canned beans and veggies are either no-salt or low sodium.

total calories 2567. 10 servings at 257 calories per cup.  plenty of calorie room for cornbread and some shredded cheese.

next time i will had more green chilis or jalapenos.  it didn’t have quite enough heat for us.  but as is it is a great chili starter recipe.  please let me know if you try it out!
