monday
lunch: leftover black bean soup it was good last night but today it was delicious! at 93 calories per large serving you can’t go wrong.  this soup will definitely be in our rotation for the rest of the “cold” months.
dinner:  more leftovers.  black bean soup and red lentil chickpea soup have filled my refrigerator.

tuesday
breakfast:  (prior to run) 1 egg cup. (after run) yogurt.
lunch:  fruit salad. rice cakes with laughing cow cheese.
dinner: pb2 smoothie. spinach salad with cranberries, pecans, and raspberry vinaigrette.

wednesday
breakfast: (prior to run) 1 egg cup. (after run) yogurt.
lunch: black and pinto bean salad.  over spinach.
dinner:  baked white fish. sub the pine nuts for pecans and the basil pesto for sun-dried tomatoes. side of cauliflower mashed “potatoes” and garlic snap peas. for the cauliflower, sub fat free cream cheese and fake butter.

thursday
breakfast: (prior to run) 2 egg whites, 1 egg scrambled. (after run) yogurt.
lunch:  leftover cauliflower “potatoes” and side of garlic sugar snap peas.
dinner:  stir fry. sub shrimp for chicken.

friday
breakfast:  oatmeal with sliced banana.
lunch:  pb2 smoothie. rice cakes with laughing cow cheese.
dinner:  leftover stir fry.

saturday
breakfast:  (prior to run) 2 egg whites, 1 egg scrambled. (after run) yogurt.
lunch:   pb2 smoothie. rice cakes with laughing cow cheese.
dinner:  homemade tomato soup.

sunday
brunch:  oatmeal, whole grain pancakes. hold the syrup for me and add fresh fruit.
dinner:  out and about.

snacks for the week:
