my new favorite noodles

if the word tofu makes you squirm, you may skip this post.  i grabbed a couple of bags of the tofu shirataki noodles at whole foods the other day.  i was craving noodles.  a bowl of pasta is my comfort food.  one that i have missed because between being celiac or being a fatty, a bowl of noodles does not a healthy body make.

40 calories in an entire bag.  a perfect bowl of gluten free, low calorie noodle goodness.

i have been playing around trying to find a delicious but still low calorie pasta “sauce.”  so far, this is my favorite.  2 teaspoons of sun-dried tomatoes, drained of oil for 30 calories.  plus 1 tablespoon of parmesan cheese for 22 calories.

how i prepare the noodles.  when you first open the bag, it smells.  not good.  kinda gross.  i am just keeping it real people.  but rinse and drain.  then put in a small saucepan with water and boil for maybe 5 mins.  then drain again.  no more smell.  less firm noodles.  voila!

after boiled and drained, mix in sun-dried tomatoes and sprinkle with parmesan cheese.  in a bowl.  because that is how pasta is meant to be enjoyed.

my lunch for the day.  92 calories pasta bowl plus a whole fresh mango sliced.
