roasted cabbage

i love cabbage.  boiled.  shredded for coleslaw.  and now roasted.  in the last five days i have eaten 3 heads of cabbage.  this is an all time high consumption of vegetables.  there are 227 calories in a medium head of cabbage.  i have found a great way to keep the calories the same and enjoy an insanely delicious meal.

here is all you need:
1 head of cabbage
butter spray, no calorie
fresh ground pepper

a lot of recipes for roasted cabbage call for olive oil.  if you are not strictly counting calories, go for it.  but if you want to avoid the 120 calories per tablespoon of evoo then take the short cut of the butter spray.

cut approximately 1 inch slices of the cabbage.  lay on a butter sprayed baking sheet.  preheat the oven to 400 degrees.

spray with the butter spray on sides and top.  sprinkle salt and fresh ground pepper.

to the oven for 40 minutes.  the “burnt” pieces are crunchy and, i think, really good.  for me a little burnt is perfect.  cook to your liking.  this would be a great side dish but also a great meal as is.

yes.  i just ate an entire head of cabbage for lunch.  300 calorie, all veg delicious lunch.  yes please.

 and the best part, the excess goes to the chickens.  they are also big fans of cabbage!
